You know I am all about that one pot cooking. If I can through my protein and carb into the same pan and add whatever vegetables that suit my fancy that day... that's a successful meal!
I absolutely love Italy! Which is still surprising to me, as I had never had a desire to travel there most of my life. A few years ago, a friend invited me to crash at her hotel, while she attended a retreat in Rome. I have a hard time saying no to a free place to stay, especially somewhere I've never been.. so I went!
Well, I simply fell in love with Italy during those few days in Rome and vowed I would return again. So I did. The next year that same friend and I took a 2 week road trip adventure around Southern Italy! All that did was make me want more! haha... One day, we will return and do a road trip of Northern Italy, too!
I'm not a very inspired cook. I am also quite a lazy cook. In my search for well-balanced meals, that are easy to make, I've experimented a little with flavors and come up with my own recipes. My taste buds are wimps.. so feel free to add seasonings and spices to my recipes that suit your own buds! Mine will have flavor, but may be quite mild by your own standards.
Let me start with... cooking fish has always intimidated me. I love fish and seafood, but I can count on one hand how many times I've cooked fish.
My turkey chili recipe isn't spicy, in fact it is pretty basic. But for those that aren't fans of spicy foods, this one is for you!
A lot of banana bread recipes that I've come across require 4 or 5 bananas... and well, I rarely end up with 3 over ripe bananas - let alone 4 or 5! Here's my 3 Banana and Walnut Bread Recipe. Enjoy!
Who knew I had my own lasagna recipe?! But I do! I have been using this recipe since 2011 and it's a hit every time. Even my mother-in-law said the only time she has had better lasagna was in Italy! You know I took that as a challenge, and when I was in Rome in June of 2017 I had to try their lasagna for myself. I honestly think over all my lasagna is better flavored, but they had better noodles - because they were fresh. So, if you wanted to have the BEST lasagna on Earth, all you would have to do is make my recipe with fresh noodles! This recipe, however, uses dried noodles. Bon Apetit!
This hearty soup serves 10-12 and is always welcome at a potluck dinner
It even better the next day! Make sure you have plenty for leftovers!
I'm a Mounds Bar addict. Truly. I love chocolate and coconut together. In anything. I even use flavored coffee creamer that is inspired by Girl Scout cookies - you know the ones with coconut and chocolate?
These Chocolate Coconut Bites satisfy that craving. They're so delicious and actually kind of healthy. They're also super easy to make and are made with items you probably already have in your pantry. If you don't have these items in your pantry, you should consider stocking them. Besides needing them for these delightful, little treats, there are so many great uses for them in the kitchen and beyond. Honey (and lemon) face masks... Coconut oil lip treatment... and so much more!
This is a super easy way to add sweet n' spicy fun to your favorite microwave popcorn!
