The Elephant Rock Loop Trail is just over a mile long. The parking is located at the East entrance to Valley if Fire, but you could also park at the Arrowhead lot about a 1/2 mile into the park from the East entrance.

In October 2021 I went to Peach Springs, Arizona and purchased a pass from the Hualapai Nation to traverse on a 20 mile dirt road/trail into the Grand Canyon. As far as I know, it's the only part of the Grand Canyon that you can drive all of the way to the bottom of the canyon.
Spring Mountain Ranch State Park outside Las Vegas, NV has several short hiking trails. Although there is a little elevation gain on the Sandstone Canyon Loop trail, I would say all there trails are easy. These photos are from October 2021.
